Are you looking for an easy Christmas cookie? This is a super easy, fast, and creative cookie recipe that you can whip out in no time. We use the classic peanut butter recipe, add a Rolo, and a bit of caramel for a great variation of the traditional Peanut Butter blossom cookies. You can use our traditional peanut butter cookie recipe OR the gluten-free peanut butter cookie recipe for these (which we actually prefer).

While Rolo’s aren’t certified gluten-free, they are listed by Hershey as gluten-free and should be safe for most (as always, YOU know what’s best for you!) gluten-free diets.

Instead of a cookie sheet we use a mini-muffin pan for these cookies. If you don’t have a mini-muffin pan feel free to use a cookie sheet. It won’t be as perfectly round in shape but it will still be delicious!

The best tip for any of the kisses, stars, or chocolate candy Christmas cookies is open those candies BEFORE you need them. It’s so very annoying to realize that you can’t open them as fast as the cookies are cooling. Be smart and have them ready! This is a perfect time for the little people that want to help to get to participate. Who cares if you lose a few candies to little mouths…it’s all about the fun!

When the cookies come out of the oven you want them to be golden brown around the edges and set on the top. About 8 minutes.

Press the candies (that you already opened!) into the tops of the cookies. Press them firmly into the center. You will need to work quickly before the cookies cool too much.

Finish up the Rolo cookies by drizzling caramel sauce over the top of them. Use your favorite sauce or purchase a great version (look in the ice cream toppings). We love Tastefully Simple’s Creamy Caramel ™ .

Caramel Rolo Peanut Butter Cookies (gluten-free)

Easy peanut butter cookies with Rolo candy middles. A great alternative to the traditional peanut butter kiss cookies.

Ingredients
 

  • 2 cups peanut butter
  • 2 cups white sugar
  • 2 eggs
  • 1 pkg Rolo chocolate candies
  • 1 jar caramel sauce we use Tastefully Simple’s creamy caramel sauce

Instructions

  • Mix eggs, sugar, and peanut butter together.
  • Drop by tablespoons into mini muffin tin that has been well greased.
  • Bake at 375 degree oven for about 8 minutes or until top is set and edges are golden brown.
  • Immediately press Rolo candies into warm cookies.
  • Cool.
  • Remove cookies from pan and drizzle with caramel sauce

Notes

some caramel sauce needs to be warmed slightly before using.
