Have you heard that I love cupcakes? I expect, if you have been here at NellieBellie for any period of time…you have. But, I just don’t have the time to make the filled and frosted little bearers of joy anymore. All this darn design work has gotten in the way. But, there is always a way to enjoy the little things in life that mean something to you! Even if you have to compromise a wee bit. These marshmallow filling cupcakes are my favorite little trick for making “gourmet” cupcakes in an hour flat. And yes, that includes baking and frosting.

Let me tell you my secret. A marshmallow. And cake mix. Perhaps a little homemade frosting, if you like. Really…that’s just icing on the top (get it :)).
- 1 chocolate cake mix, prepared
- large marshmallows
- chocolate frosting (our fluffy chocolate frosting is below)

To Make these marshmallow filling cupcakes of goodness:
Place a marshmallow at the bottom of your unfilled cupcake liner. Fill with your batter like usual. Bake as usual. But, look at what you get for the extra trouble…
Right out of the oven these look amazing! Full of chocolate gooey goodness….oh my!
Of course, we added some of our favorite homemade chocolate frosting to ours. Chocolate cake, gooey marshmallow center, and fluffy chocolate frosting. Seriously, enough to make your day do a happy dance!
