Marshmallow filling cupcakes

Have you heard that I love cupcakes? I expect, if you have been here at NellieBellie for any period of have. But, I just don't have the time to make the filled and frosted little bearers of joy anymore. All this darn design work has gotten in the way. But, there is always a way to enjoy the little things in life that mean something to you! Even if you have to compromise a wee bit. These marshmallow filling cupcakes are my favorite little trick for making "gourmet" cupcakes in an hour flat. And yes, that includes baking and frosting.

Let me tell you my secret. A marshmallow. And cake mix. Perhaps a little homemade frosting, if you like. Really...that's just icing on the top (get it :)).



  • 1 chocolate cake mix, prepared
  • large marshmallows
  • chocolate frosting (our fluffy chocolate frosting is below)

To Make these marshmallow filling cupcakes of goodness:

Place a marshmallow at the bottom of your unfilled cupcake liner. Fill with your batter like usual. Bake as usual. But, look at what you get for the extra trouble...

Right out of the oven these look amazing! Full of chocolate gooey goodness....oh my!


Of course, we added some of our favorite homemade chocolate frosting to ours. Chocolate cake, gooey marshmallow center, and fluffy chocolate frosting. Seriously, enough to make your day do a happy dance!

Fluffy Chocolate Frosting

Light, fluffy, easy

  • 1 pint of heavy whipping cream
  • ¼ cup cocoa
  • 1 cup powdered sugar


  • Beat until blended.
  • Add more powdered sugar as necessary to achieve the right consistency.

    I kinda suspected you were a cupcake junkie when you were writing all those muffin variations. You know, you can grab a cupcake or muffin and no one is the wiser unless he or she counted the amount. Now a cake is a different story . . . .you just can't sneak a piece without it being obvious . . . .especially if the crumbs lead to you. With cupcakes you can discreetly thrown away the wrapper and you're innocent unless they can prove it :-)

        1. Oh no!! Hmmm. We were chatting about this and don't know for sure. A few ideas...perhaps your cooking time was longer than the usual 25 minutes or so? Perhaps your marshmallows were small? (did you use the big ones). Or perhaps you just have nasty, magic marshmallows set on destroying cupcakes. I wish we could give you a great answer! Let us know if you figure it out...we are curious!

  2. There among the writing on the bar bathroom wall, I read Nellie Loves Cupcake. I just thought that was a pet name for Mr. Nellie.
