Homemade No-Pectin Jam recipe is:
- 1 pound of frozen fruit (cut into small pieces)
- 1 cup of sugar
Put the ingredients together and bring to a low boil in a heavy saucepan on medium heat. Gently boil for about 7 minutes. Simmer for another 45 minutes or until the desired texture is achieved. Pour into clean mason jars. Keep in the fridge for up to 1 month.

To shortcut this recipe and use only 4 ingredients:
Swap out your favorite blueberry pie filling for the fresh blueberry filling. Fill a prepared pie crust, glaze the top with an egg wash, and bake according to the pie crust instructions.
Truly, it doesn’t get much easier than that!

Secret to perfectly flaky scones:
When the butter melts in your dough while baking in the oven it creates little pockets where steam expands and helps the dough rise. If you have butter that is melty before you get to the dough to the oven, you lose those pockets of gas expanding, leaving you with a denser, less fluffy scone.
Using cold butter when making scones (and then freezing the dough) ensures you have as little melting BEFORE the dough hits the oven…resulting in a buttery and flaky pastry!
