Pumpkin Chocolate Chip Cookies

I am a firm believer in a glass of real milk ( I mean the good stuff… 2% or whole, please) and a few cookies for kids after school. Do I succeed in having a cookie jar full of cookies, like I would like? Nope. To be honest, fresh cookies once a month or so is about all I can manage. And there is no guilt on my part for that. Especially if those once a month cookies are these pumpkin chocolate chip cookies. These are so tasty that they keep me in super mom category for weeks afterwards :).

My 14 year old son particularly loves the fall cookies. He is all about the ginger, cinnamon, and pumpkin flavors and loves when the cooler weather rolls around and he comes home to the smell of fall and a plate of these cookies on the table.  These pumpkin chocolate chip cookies are easy to make, full of pumpkin-y fall flavor, and packed with yummy chocolate chips. I can whip up a batch of these in half an hour. While I drink my coffee :).

Ingredients
 

  • 1 cup canned pumpkin
  • 1 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 2 cups flour
  • 1 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 1 pinch salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon milk or cream
  • 1 tablespoon vanilla
  • 1 teaspoon pumpkin pie spice optional
  • 2 cups chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Combine the pumpkin, oil, sugar, and egg... beat well
  • In a separate bowl, stir the flour, baking powder, ground cinnamon, salt, and pumpkin pie spice.
  • Dissolve the baking soda into the milk and stir it into the dough.
  • Add the flour and mix well.
  • Stir in the vanilla and chocolate chips.
  • Drop by tablespoons onto a greased baking sheet and bake until golden brown, about 12 minutes. 

Notes

You can successfully sub:
1/2 of the oil for applesauce.
White sugar for brown sugar.
Wheat flour for all-purpose flour.
