Sauteed Radishes and Bacon Recipe

I picked up a couple of bunches of Easter Egg Radishes in beautiful shades of red, purple, and pink. They tasted heavenly in this radish recipe. I'm telling you, the flavor of these...winner, winner chicken dinner! Radishes and Bacon belong together. Forever and always.

This recipe is a surprising radish recipe. A simple radish salad recipe might not sound that delicious, but combine it with bacon and it's fantastic!

Skip the potatoes and grab a pound of radishes instead. Then get yourself a slab of bacon like Grandma would have done, and make these sautéed radishes on your next Saturday afternoon. You'll be so glad you did! You'll write me a letter of cheer and joy!! We love those.

This easy bacon and radish salad recipe that pairs perfectly with sandwiches, soups, or even chicken. Radishes cooked up wth bacon is a great way to introduce your family (and me!) to an otherwise under-appreciated veggie!

Key Ingredients:

  • Uncooked bacon slices, cut into chunks
  • a 2-pound bunch of radishes, cleaned & quartered. Be sure to save the leaves to turn into pesto.
  • Fresh chopped parsley
  • Apple cider vinegar
  • Sugar or honey
  • Salt and pepper.

Optional: try adding a bit of fresh garlic or a teaspoon garlic powder to the fried radishes.

Instructions for sauteed radishes:

  • Cut the bacon into chunks and place bacon into a large nonstick skillet.
  • Cook for about 3 minutes on medium-high heat.
  • Meanwhile, wash and quarter the radishes.
  • Add the quartered radishes to the bacon and cook for about 15 minutes.
  • After the radishes are soft add a tablespoon apple cider vinegar, sugar, salt, and black pepper...stir and cook for about 1 minute.
  • Serve.

Ingredients
 

  • ¾ pound bacon cut into chunks
  • 2 bunches radishes cleaned & quartered
  • ½ cup fresh chopped parsley
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar optional

Instructions

  • Cut the bacon in chunks and place into hot skillet.
  • Cook for about 3 minutes on medium heat.
  • Meanwhile, wash and quarter the radishes.
  • Add the radishes to bacon and cook for about 15 minutes or until soft (cover with lid to speed up the process)
  • After the radishes are soft add the vinegar and sugar...stir and cook for about 1 minute.
  • Serve. Yum!
