Have you tried butterfly pea flower tea yet? If you haven’t, you’ll be surprised at how popular this tea has become, especially on Pinterest & Instagram. The butterfly pea tea is native to Southeast Asia and packed full of antioxidants. The flavor is similar to green tea (I think.) and the tea has a beautiful vibrant blue color often used for natural food coloring that color changes to purple when the ph levels change by adding acidic ingredients.
This is the Butterfly Pea Flower that I use for making tea and the simple syrup for this martini.

Key Ingredients:
- Dried Butterfly Pea flowers. I purchase my flowers off of Amazon (I haven’t found a local store that carries them.)
- Gin
- Vermouth
- Lemon
- Ice
Alternatives:
- Swap out the gin for vodka.
- Try lime juice or another citrus in place of the lemon.
- Swap out the gin for tequila and the vermouth for triple sec for a margarita.
- Muddle mint into the gin and add a bit of club soda to the top of the cocktail for a mojito-inspired flavor.

How to Make the Butterfly Pea Flower Syrup:
- Bring 1 cup of water and 1/2 cup of sugar to a boil.
- Add 8 Butterfly Tea Flowers to the boiling water.
- Simmer on low for 4 minutes.
- Strain flowers from the syrup and chill.
How to Make the Butterfly Pea Flower Martini:
- Swirl the vermouth in a chilled martini glass.
- Pour the gin into the glass followed by the cold simple syrup and stir.
- If desired, add a dash of bitters.
- In front of your guests, squeeze the fresh lemon juice into the glass to see additional color magic.
- Garnish with a fresh lemon twist and dried butterfly pea flower.
Optional:
- Add the alcohol and tea into a cocktail shaker, add ice cubes and shake it. Strain it into a martini glass and add the lemon right before serving.

Butterfly Pea Flower Cocktail
Ingredients
- 2 oz gin
- 1/2 oz vermouth
- 1 oz butterfly tea simple syrup
- 1/2 fresh lemon
For the Butterfly Tea Simple Syrup
- 1 cup water
- 1/2 cup sugar
- 8 dried butterfly tea flowers
Instructions
- In a chilled martini glass swirl the vermouth.
- Add the gin to the glass and stir.
- Pour in the butterfly simple syrup.
- Squeeze the 1/2 of a lemon into the drink when ready to serve.
- If desired, add a dash of bitters.
- Garnish with a wedge of lemon and a butterfly tea flower.
Buttrfly Tea Flower Simple Syrup
- Combine 1 cup of water and 1/2 cup of sugar in a heavy sauce pan. Bring to a low boil.
- Add 8 dried butterfly tea flowers to the boiling water and simmer on low for 4 minutes.
- Strain the flowers from the syrup and chill the syrup.
