Truthfully, my family thinks the gluten-free recipe is the BEST peanut butter cookie recipe there is. But for those of you that prefer a classic…this is the best. This is the recipe you will use again and again for the classic peanut butter cookies. In this cookie recipe I prefer to use honey instead of brown sugar for a nice change. Don’t be fooled, subbing out honey does not make it healthy by any means. But it gives it a sweetness that is more gentle than the processed sugar. Feel free to use the more traditional brown sugar if that is what you have or prefer.
Have you seen such fluffy, tasty looking peanut butter cookie dough before? Me either. Soooo tasty! (If you are a cookie-dough eating person you MUST try the Oatmeal Chocolate Chip cookie dough! I make that stuff with a wee bit of milk instead of egg JUST to eat the dough. Yum!)
If you are a baller cookie person feel free to make perfectly shaped balls of dough. I’m a drop cookie person and have no interest in perfect cookies hence the drop versions. A cookie that tastes good is a perfect cookie in our house!

- 1 cup soft butter
- 1 cup peanut butter
- 1 cup sugar
- 1 cup brown sugar or I use 1/2 cup honey
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 egg
- 1/2 teaspoon vanilla
- 2 cups flour
Instructions
- Beat butter, peanut butter and sugars together.
- Add baking soda and baking powder and beat again.
- Add egg and vanilla and beat again until combined.
- Add flour and beat until combined (you may end up having to use a wooden spoon for the final stir)
- Drop a tablespoon about 2 inches apart on an ungreased cookie sheet.
- Bake for 8 minutes at 375 degrees.

or... press the dropped dough with a fork dipped in sugar.
You can make the dough a bit more crunchy and crinkly, perfect for the peanut butter kiss cookies, by using shortening instead of butter.
