Do you have a go-to dinner for those nights when you have had a crazy, busy day but need to put a hearty, healthy meal on the table? Mine is my easy chicken salad recipe. It’s a family favorite and always a family pleaser in a short period of time.
Some nights I up the game a bit with my homemade carrot turmeric dinner rolls to put the chicken salad on. Those are special nights, though, to be truthful. My family seems to be more than happy with croissant rolls or bread.
Making your own rolls doesn’t take much time and is easy to do. And there is something so fantastic about the smell of rising dough that just can’t be beat. If you have never tried working with yeast dough…do so. It will change your life.
Easy Chicken salad recipes are a dime a dozen.
Everyone has a favorite recipe of their own and most likely…so do you. But have you tried subbing out yogurt in your version for the traditional mayo or Miracle Whip? It’s a healthier variation that doesn’t take away from the flavor, at all. In fact, add a bit of curry powder to your yogurt version and guaranteed this version will become a favorite!
Ingredients
- 2 cups chopped chicken
- 1 12 oz container plain greek yogurt
- 1 teaspoon curry powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 tablespoon lemon juice
- 1 cup grapes sliced in half (I sub out diced apples sometimes)
- 1/2 cup slivered almonds or chopped walnuts
- 1 stalk celery chopped
Instructions
- Mix ingredients together.
- Serve.
- For best results, chill for at least an hour.
CARROT TURMERIC DINNER ROLLS
INGREDIENTS
1 cup whole wheat flour
2 ¼ cup all-purpose flour
1 cup buttermilk
5 tablespoons honey
â…“ cup butter
1 beaten egg
1 teaspoon turmeric
1 pkg dry-active yeast
1 cup shredded carrots plus ½ cup shredded carrots for the tops.
¾ teaspoon salt
INSTRUCTIONS
Mix the flours and yeast together in a large bowl.
In microwave safe bowl mix the buttermilk, honey, and butter together.
Microwave for 30 seconds, stir. Microwave until warm in 10 second intervals. Do not let boil.
Stir the warm mixture into the flours and yeast until properly mixed.
Add carrots and salt, stir with wooden spoon.
Form dough into a round and place into greased bowl, turning once so that the dough is coated.
Let dough rise in warm place until double in size (about 1 hour).
Punch dough down and turn out on to floured surface. Knead for about 10 minutes. Let rest.
Form into small balls and place 1 inch apart on greased baking sheet pressing a bit of shredded carrot into the tops of each.
Cover and place in warm place to rise until double in size (for about 1 hour)
Bake in 350degree oven for about 25 minutes or until golden brown.
