Guys, I have a confession to make. I’m not so good at getting up and going in the morning. I have my routine of meditation, yoga, and then coffee and that’s about as far as I’ve been able to build in. So breakfast usually consists of cereal, oatmeal, muesli, or some other easy, yet healthy option.
Except for Sundays. Usually, Sunday mornings are special. I skip my normal routine in favor of dragging myself to the kitchen table with a blanket wrapped around me and being handed a cup of coffee by the world’s best husband. Then one by one the kids come on down and we sit and chat, wake up, and listen to breakfast being made.
Remember the world’s best husband? He truly is the best. Partly because about 8 out of 10 Sundays, he does breakfast.
Always alot of meat.
The times that it is my turn I make Blueberry Yogurt pancakes. Yum. Just thinking about them is making my mouth water and me wish for Sunday. They are so yummy.
Soft, warm, sweet, and a bit tart from the Driscoll’s blueberries. And because I put them in at just the right time, in just the right way…they pop in your mouth. I. Am. So. Hungry. Right. Now.
Anyways, the point of this tirade is to remind you (and myself) how important it is to spend a morning as often as you can with your family in the early moments of waking up. Before the world closes in, you wind up for your day, and everyone has their wits about them. We have had weekend breakfasts since the kids were small. Now that they are grown they might be a bit fewer in between but you would be amazed at how
can get even your teens to drag themselves out of bed and to the table.
Give it a try, will you. Start a family breakfast tradition of your own. I totally recommend giving these pancakes a try. They will rock your world. BONUS points to me for making them with Greek Yogurt and only a bit of sugar.
