If your home is anything like ours, breakfast can be hectic and crazy. It’s a rush to get out the door with proper clothing on, teeth brushed, and homework done. Breakfast is often quick, easy, and sometimes moving with us. That is why we know you will love these easy Cheesy Sausage breakfast cups. They are fast and easy to make, delicious to eat, and can be eaten while heading out the door at full speed!

This recipe is a winner in almost any busy home. Especially homes with kids that have early start times! You can prep these the night before, put them in the fridge, and then bake them in the morning. They also are fabulous warmed up! Bake a batch anytime you can, put them in the freezer, and then thaw and reheat them as needed.
Tip: we recommend reheating them in a toaster oven or wrapped in aluminum foil and placed in the oven. The microwave works just fine but leaves the crust a bit more soggy than the other methods would.
You can customize the ingredients to your liking. Add onion, diced peppers, or spinach if your family loves that. Small children often like these as simple as possible usually preferring the classic ingredients of biscuit, egg, cheese, potato, and sausage.
Tip: if using frozen hashbrowns, thaw them prior to using. A great alternative is the shredded hashbrowns you can find in the refrigerator section of your grocery store.

The bake time on these comes down to the ingredients you use and if they are frozen or at room temperature. Try to use ingredients that aren’t frozen, keep the oven a bit lower than the biscuits usually bake at to allow time for the potatoes and eggs to cook, and layer the ingredients in the way we mention to help everything bake properly. We found that having the biscuit at the bottom helps it to have a nice golden brown crust, help the breakfast cups release from the tin easier, and keep these yummy bites portable.
Of course, we can’t leave without mentioning the importance of the cheese on top! The yummy Crystal Farms© Cheese is not only pretty, it also serves an important role of helping to meld all the other ingredients together. The biscuit is the bottom of the yummy breakfast cup and the cheese is the top. All the other ingredients cling to them for the ride. That cheese on top helps keep these portable AND delicious!

Ingredients
- 6 rounds of pre-made biscuit dough divided in half.
- 8 eggs beaten with a bit of salt & pepper
- 1 pound of ground breakfast sausage cooked.
- about 3 cups frozen hashbrowns thawed.
- 1 package of Crystal Farms colby jack or cheddar cheese
- green onions optional
Instructions
- Spray a muffin tin well. (do it a couple of times!)
- Gently press the 1/2 of a biscuit pre-made dough into the bottom of the cupcake tins.
- Layer about 1/4 cup of shredded hashbrowns on top of the dough.
- Add 1/12 of the ground sausage you cooked.
- Pour a bit of the eggs into the tin, just until it comes to the top. (go slowly…this happens fast!)
- Sprinkle with cheese!
- Bake in a pre-heated 350 degree oven for about 25 minutes (or until golden brown).
- Optional: Immediately after coming out of the oven, add the sliced green onions.
