This coconut lime cupcake recipe is definitely a summer cupcake. Â People might not always think of cupcakes when thinking of summertime, but that will change when you get one taste of this coconut lime cupcake. Â It is light, fluffy, and zesty. Â It just screams summer to me! Although, anything coconut and lime screams summer.
Up the flavor punch of these cupcakes by scooping out the center of the cooled cupcake and filling with coconut before topping with the lime frosting. And, of course, top the frosting with lime zest. This is a WOW cupcake that is oh. so. simple.
The coconut lime flavor combo is like Margaritas. And margaritas are reminiscent of summer.
These coconut lime cupcakes are full of memories of summer’s past and memories currently being made with my own family.

Macaroni and Cheese Pizza
Tortilla Shell Pizza’s (a family of 12, we had alot of these!)
Ingredients
- 2 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 1/4 cups sugar
- 1 1/2 sticks of butter
- 3 eggs
- 1 cup coconut milk
- 1/4 cup shredded coconut.
- Bake on 350 degrees for about 20 minutes. Let cool.
Instructions
- Mix dry ingredients (minus the shredded coconut) together in medium bowl. Set aside.
- Beat the sugar and butter together with electric mixer until creamy and smooth.
- Add eggs one at a time to butter mixture, beating between each addition.
- Add a little of the coconut milk and beat.
- Then a little of the dry mixture and beat.
- Continue, every other, until everything is mixed in.
- Fold in the shredded coconut.
- Bake on 350 degrees for about 20 minutes. Let cool.

Ingredients
- 4 cups of powdered sugar
- 1 1/2 stick of soft butter
- 4 tablespoon lime zest
- 4 tablespoon of lime juice
- 1/4 tsp salt
- 1/4 cup coconut milk
Instructions
- Beat sugar and butter together until fluffy.
- Add remaining ingredients and beat until smooth.
- Add additional sugar until desired consistency is reached.

Mmmmmm, I love lime and coconut so I know I would DOUBLY love these!! And droopy frosting just means you get to lick your fingers which makes eating these that much more fun!
