Oldest of ten kids here. So yeah, I learned early that a good meal has to feed a crowd without drama, without a huge budget, and without anyone going home hungry. Still how I cook. Every single day, honestly.

And here’s the thing about cooking for a crowd for that long… “everyone will love this” is a myth. A total myth. Everyone’s got an opinion. Everyone’s got a preference. And you never actually know how many people are showing up hungry until they’re standing in your kitchen.

This taco macaroni is what came out of all that. Ground beef, ground turkey, whatever cheese was hanging out in the drawer, whatever sauce situation I had going on that week… it just worked. Every time. A budget-friendly, ridiculously adaptable, yummy recipe built for however many people end up at the table.

And it doesn’t care how many show up, either. Make a double batch. The leftovers are somehow even better the next day (how does that happen, seriously). Freeze it in portions and future you gets a real dinner with zero effort involved. That’s the whole deal here. Feed the crowd you’ve got, with what you’ve got, and don’t stress about the rest.

Make It Yours

This recipe is built to adapt. Here are a few ideas to make it work for your kitchen and your crowd:

Meat: Ground beef is the classic here, but ground turkey or ground chicken work just as well if that’s what you’ve got. Crumbled tofu is a solid swap too if part of your crowd is keeping things meatless.

Sauce: Tomato sauce keeps things mellow but swapping in salsa or even Rotel diced tomatoes gives it a little more kick and a lot more personality. Use whatever heat level your family can handle.

Cheese: Cheddar is the go-to, but a Mexican blend or Monterey Jack melts in just as beautifully if that’s what’s in your fridge. Shred your own cheese rather than use the bagged shredded cheese for ultimate meltiness. But no shame if you need to keep it easy with the bagged cheese!

Noodles: This holds up really well with gluten free elbow macaroni, so if that’s what your family needs, cook away with confidence. No adjustments needed.

Toppings:

Our recipe tester topped her bowl with diced avocado and a dollop of plain Greek yogurt, and honestly, it’s a genius move. It adds a cool, creamy finish that plays perfectly against the spice from the salsa. A few other favorites around here:

  • Chopped cilantro, for a little freshness
  • Extra shredded cheddar, because more cheese is rarely the wrong answer
  • A dollop of sour cream if Greek yogurt isn’t your thing
  • Diced avocado
  • Diced tomatoes
  • Green onions

Practical Tips

Quick heads up on two things I don’t want you to skip, both courtesy of my recipe testers (this is exactly why we have them). The original version of this recipe came back a little shy on garlic, so we bumped it up to 3 cloves. Don’t skimp here, it’s what gives the whole dish its backbone.

The other one’s the cream cheese. Testing turned up that the dish wasn’t landing as creamy as you’d want from anything calling itself mac and cheese-adjacent, so we added it in. I know it sounds like an odd addition to a taco mac situation, but it’s the difference between “pretty good” and actual creamy, melty, can’t-stop-eating-it texture. Stir it in with the cooked macaroni before the cheddar goes on, low heat, and let it melt in completely. Small step, but it’s doing a lot of the work here.

Freezing and Storage Tips

This is one of those dishes that was basically made for your freezer.

To store: Let it cool completely, then keep it in an airtight container (these are my faves) in the fridge for up to 3 days.

To freeze: Portion it out once it’s fully cooled (individual containers make grab-and-go lunches easy) and freeze for up to 2 months.

To reheat: Warm it gently in a pan over low heat, or microwave with a small splash of water or milk to loosen the sauce back up. Comes back just as creamy as the day you made it.

Ingredients
  

  • 8 oz elbow macaroni
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 tbsp taco seasoning
  • 1 cup tomato sauce or salsa
  • ½ cup water
  • 2 oz cream cheese softened, cut into small pieces
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped cilantro optional, for garnish

Method
 

  1. Bring a large pot of generously salted water to a boil. Cook macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook for 5–6 minutes, breaking it apart until browned.
  3. Add diced onion and minced garlic, sauté for 2 minutes until fragrant.
  4. Stir in taco seasoning, tomato sauce, and water. Mix well and let simmer for 5–7 minutes, until the sauce thickens slightly.
  5. Tip: Swap the tomato sauce for salsa if you want a little more zip.
  6. Reduce heat to low. Add the cooked macaroni and cream cheese to the skillet, tossing until the cream cheese melts in and the sauce turns glossy and creamy. Sprinkle shredded cheddar over top and stir until melted.
  7. Garnish with chopped cilantro, or top with any of the options below. Serve warm.
