Sunflower Seed Coconut Chocolate Chip Cookies

These are all the comfort of traditional chocolate chip cookies but with the added nutrients of sunflower seeds and coconut. So yummy!

Ingredients

  • 1 cup coconut oil room temperature
  • 1 cup sugar
  • 1 cup light brown sugar packed
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups quick oats
  • 1 cup coconut flaked (optional)
  • 1 cup sunflower seeds roasted & unsalted
  • 1 cup chocolate chips or use cacao nibs

Instructions

  • In a mixing bowl combine coconut oil and sugars until light and fluffy; add eggs and vanilla and combine. 
  • Add the flour, baking soda, baking powder, and salt. 
  • Stir in oats, coconut, chocolate chips, and sunflower kernels. 
  • Scoop by the tablespoon and form round balls, with your hands. Drop onto ungreased baking sheet about 2 inches apart, do not flatten. 
  • Bake at 350°F for 8 - 11 minutes or until cookies are lightly browned around the edges. 

Notes

Note: this recipe works great in my stand mixer with the paddle attachment. I can even add the oats, coconut, c.c. chips, and kernels without any problem.
---note. I have successfully subbed out 1/2 of the sugars for 1 cup of honey
