Philly Cheese Steak puffs

Ingredients

butter

large onion

large green pepper

pkg puff pastry

beef bouillon paste
or 1 beef bouillon cube

thinly sliced roast beef
1/2
pound
thinly sliced provolone cheese

Instructions
Thaw the pastry according to directions.
Cut the puff pastry sheets into about 24 squares (a pizza cutter works great!).
Bake according to the directions.
Take a spoon and press the center of the pastry down to create a divet in the center.
Add cheese to the top of each square and pop in the oven just until melted.
In a large skillet on medium heat melt the butter.
Add the onions, peppers, and stock. Cook for 2 minutes.
Add the mushrooms and cook another 2 minutes.
Add the beef and just heat. (do not cook longer than necessary to heat.
Top the cheesy puffs with the beef and veggie mixture being sure that each puff gets equal amounts.
Notes
Sometimes I don't make quite enough mixture for each puff and just let the kids eat the naked ones. They love them!
