One Pot Hawaiian Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tbsp butter
  • 1/4 cup soy sauce
  • 16 oz pineapple tidbits, drained -save the juice (we use frozen tidbits but canned works great too!)
  • 1/4 cup honey (or 3 tablespoons of brown sugar)
  • 2 tsp sugar
  • 1/2 tsp cloves and ginger (or cloves and cinnamon, or cinnamon and ginger...one of those combos)
  • 3 tablespoons flour (if needed, use a gluten-free substitute)

Instructions

  • Melt your butter in a large skillet on med-high heat. Add chicken and cook for about 3-4 minutes on each side. Remove the chicken from the pan and set aside.
  • Add the pineapple, soy sauce, honey, sugar, and spices to the pan, scraping the bottom a bit to bring up the browned bits. Let come to a boil.
  • Turn the sauce down to a simmer. Push aside the pineapple and add the flour to the liquid, slowly...whisking with a fork as you add it.
  • Add enough flour to bring the sauce to the thickness you prefer. If necessary, add some of the saved juice to thin out the sauce.
  • Remove from heat and add the cooked chicken. Stir.
  • Serve on top of cooked rice with chopped green onions.
