Marshmallow Fluff (5-Minute Corn Syrup Method)

The fast version. Two ingredients, five minutes, done. This isn't technically "true" fluff (that's the gelatin-based version above), but it looks, feels, and tastes just like it, and it's the one to reach for when you're in a hurry.

  • Double boiler

Ingredients

  • 2 cups mini marshmallows or 15-20 regular marshmallows
  • 2-3 teaspoons corn syrup

Instructions

  • Warm the marshmallows in a double boiler, stirring constantly to prevent burning.
  • Once the marshmallows are mostly melted, add the corn syrup and continue stirring.
  • Once fully melted and smooth, remove from heat.
  • Use immediately, or store and use within a few days.

Notes

Mini marshmallows melt faster and more evenly than regular-sized ones, so they're your best bet here. The corn syrup is what keeps everything soft as it cools; skip it and you'll end up with a sticky, hardening mess instead of fluff.
