Veggie Egg Bake

A delicious breakfast egg bake full of veggies and flavor!

Ingredients

  • 1 package hash browns
  • 2 cloves garlic
  • 1/2 cup cherry tomatoes
  • 2 cups spinach
  • 8 eggs
  • 1/2 cup milk
  • 1/2 teaspoon nutmeg
  • salt & pepper to taste
  • 1 cup shredded cheese

Instructions

  • Preheat oven to 375.
  • Spray a square cooking dish with cooking oil. Press down shredded hash browns in bottom of pan. 
  • Bake for 10 minutes
  • Top with 1/2 cup shredded cheese.
  • Heat oil in skillet. Add garlic and cook and stir for 30 seconds.
  • Stir in 1/2 cup cherry tomatoes and continue to stir for 30 seconds
  • Mix in spinach and cook for 2 to 3 minutes, or until spinach is wilted.
  • Remove from heat and spread over hash browns.
  • Whisk together eggs, milk, nutmeg, and salt and pepper. Pour over veggies and hash browns.
  • Sprinkle remaining cheese on top.
  • Bake for 35-40 minutes or until top is golden brown.
