Coconut Lime Cupcake
Ingredients
2 1/4
cups
all-purpose flour
1
tsp
baking powder
1
tsp
baking soda
1
tsp
salt
1 1/4
cups
sugar
1 1/2
sticks of butter
3
eggs
1
cup
coconut milk
1/4
cup
shredded coconut.
Bake on 350 degrees for about 20 minutes. Let cool.

Instructions
Mix dry ingredients (minus the shredded coconut) together in medium bowl. Set aside.
Beat the sugar and butter together with electric mixer until creamy and smooth.
Add eggs one at a time to butter mixture, beating between each addition.
Add a little of the coconut milk and beat.
Then a little of the dry mixture and beat.
Continue, every other, until everything is mixed in.
Fold in the shredded coconut.
Bake on 350 degrees for about 20 minutes. Let cool.
Notes
Don't over bake your cupcakes! Set your timer for 15 minutes, then check to see if the centers spring back when touched. That tells you they're done!
