Preheat oven to 375.
Spray a square cooking dish with cooking oil. Press down shredded hash browns in bottom of pan.
Bake for 10 minutes
Top with ½ cup shredded cheese.
Heat oil in skillet. Add garlic and cook and stir for 30 seconds.
Stir in ½ cup cherry tomatoes and continue to stir for 30 seconds
Mix in spinach and cook for 2 to 3 minutes, or until spinach is wilted.
Remove from heat and spread over hash browns.
Whisk together eggs, milk, nutmeg, and salt and pepper. Pour over veggies and hash browns.
Sprinkle remaining cheese on top.
Bake for 35-40 minutes or until top is golden brown.
