Instructions
Preheat the oven to 400 degrees
Thaw Rhodes pizza dough according to package instructions.
On a sprayed parchment paper, Roll the dough into a large rectangle roughly 12" by 16". Try to keep it fairly thin.
Drop fillings on to half of the dough rectangle according to the number of pizza bites you will be able to make. Be sure to leave a bit of room between each to cut them apart.
Fold the other half of the rectangle over the filling. Note, it is easiest to simply pick up the parchment paper and fold it over peeling the parchment paper away from the dough.
Cut apart the squares using a pizza cutter. Brush the top and in between the rows with the beaten egg.
Transfer the parchment paper onto a cookie sheet. Bake at 400degrees for 12-15 minutes or until golden brown.
To freeze, let cool and then place the bites into a large freezer bag. Freeze for up to 1 month. To reheat, preheat the oven to 475 degrees, bake for 15 minutes or until hot.

Notes
Note: 1 bag of shredded cheese, 1 jar of pizza sauce, and 1 bag of mini pepperoni will make the entire 3 loaves of Rhodes frozen pizza dough. Why not do them all and freeze leftovers?
