Baked Chicken and Tomato Cobbler
Chicken Thighs, fresh tomatoes, goat cheese, and basil come together to be baked in this absolutely deliciously flavorful cobbler!

- 3 tablespoons butter
- 3 large tomatoes sliced
- 2 tablespoons fresh chopped basil
- 4 garlic cloves minced
- 4 chicken thighs thawed
- 1 large red onion sliced
- 4 oz crumbled goat cheese
- salt & pepper
- biscuit dough see biscuit recipe or use purchased dough
Get Recipe Ingredients
Preheat oven to 350 degrees.
Melt the butter in a large, oven-proof skillet on medium heat.
Add the chicken thighs and brown both sides (about 4 minutes per side)
Remove from heat and tuck the tomatoes, onions, garlic, basil, and salt & pepper into the chicken.
Put in oven and bake while you work on the biscuit dough (about 30 minutes)
Add the goat cheese when you remove your veggies, give it a quick stir.
If you are using purchased dough--cook the veggies and chicken about 30 minutes.
Top the veggies and chicken with biscuit dough and bake until the dough is golden brown on top.
--All in all, your "cobbler" should be in the oven for at least 45 minutes to be sure the chicken is cooked thoroughly.
