Rhubarb simple syrup

Ingredients

  • 2 cups granulated sugar
  • 11/2 cups water
  • 1 teaspoon vanilla bean paste
  • Peel of one lemon (I just cut it off in 3 large pieces)
  • 1 1/2 pounds rhubarb , cut into 4inch pieces
  • juice of half the lemon

Instructions

  • Bring the 2 cups of sugar and 1 1/2 cups of water to a gentle boil until the sugar is dissolved.
  • Add the lemon, vanilla paste, and rhubarb and simmer about 5 minutes.
  • Cover and remove from heat for 20 minutes.
  • Drain the juice and cool for margarita's!
