Butterfly Pea Flower Cocktail

A classic martini recipe gets a color-changing effect with the addition of a butterfly pea flower simple syrup.

  • 2 oz gin
  • ½ oz vermouth
  • 1 oz butterfly tea simple syrup
  • ½ fresh lemon

For the Butterfly Tea Simple Syrup


  • In a chilled martini glass swirl the vermouth.
  • Add the gin to the glass and stir.
  • Pour in the butterfly simple syrup.
  • Squeeze the ½ of a lemon into the drink when ready to serve.
  • If desired, add a dash of bitters.
  • Garnish with a wedge of lemon and a butterfly tea flower.

Buttrfly Tea Flower Simple Syrup

  • Combine 1 cup of water and ½ cup of sugar in a heavy sauce pan. Bring to a low boil.
  • Add 8 dried butterfly tea flowers to the boiling water and simmer on low for 4 minutes.
  • Strain the flowers from the syrup and chill the syrup.
