Cranberry Nut Granola
A delicious, easy breakfast granola naturally sweetened with maple and agave syrup and studded with cranberries.
Servings 8 servings of 1/2 cup each
- 3 cups old-fashioned, rolled oats
- 1/2 cup craisins
- 1 cup mixed nuts
- 1/2 cup agave syrup
- 1/4 cup natural maple syrup
- 1 tsp vanilla extract
- 1/3 cup coconut oil
Preheat your oven to 330 degrees F.
In a microwave safe bowl, combine coconut oil, agave and maple syrup. Heat for
approximately 20 seconds (or until coconut oil has fully melted). Whisk together.
Chop 1 cup of mixed nuts, set aside.
In a large bowl stir together oats, craisins, nuts and melted oil mixture.
Spread on a baking sheet.
Bake for approximately 30-35 minutes, stirring halfway through.
Remove from the oven and let cool. Granola will become more crunchy as it cools.
