- ½ cup tequila--gold silver tequila will work, as well
- ⅓ cup lime juice if using chicken breasts reduce this to ⅓ cup
- ½ cup orange juice
- 1 jalapeno finely chopped
- 4 garlic cloves minced
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon red pepper flakes
- 4 skinless boneless chicken breasts or chicken thighs
Mix everything together into freezer bag or large bowl. Marinade for 6 hours or overnight.
To grill: Oil the grill grates really well. On a consistent 250-300 grill heat, sear the chicken on one side for 5 minutes...save the extra marinade.
Flip, brush with more marinade, and continue cooking for about 7 minutes or until the inside temperature is 165 degrees. Let rest and serve. NOTE: Chicken thighs will take longer to cook than breasts, expect to add at least 2 minutes to the cook time.
Try this marinade on pork chops, veggies, and even steak!
If your family likes heat, use double the jalapenos or try scotch bonnets.
