easy Strawberry Burritos

This is a simple recipe with a crispy tortilla stuffed with fresh strawberries and a sweet cream cheese filling. Easy to make and delicious to eat!

Ingredients

  • 8 8 inch Mission® Super Soft Flour Tortillas
  • 1 pkg cream cheese, softened
  • 1 cup powdered sugar
  • 3 tablespoons milk
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1 tablespoon fresh orange zest optional
  • 2 tablespoons basil, chopped
  • 16 strawberries, fresh about a pint
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil

Instructions

  • Beat everything but the tortillas, strawberries, vinegar, and oil together. 
  • Remove the tops and slice the strawberries.
  • Spread about ¼ cup cream cheese mixture on the center of the tortilla.
  • Top with 2 sliced strawberries.
  • Roll up into a burrito (fold in the sides about 1 inch, then bring the bottom up and around, tucking it under. And then the top around, tucking under.)
  • Heat 2 tablespoons olive oil on a large skillet on the stove on medium heat.
  • Meanwhile, mix the oil and vinegar together. 
  • Add the burritos to the hot pan and brush the tops with the oil mixture.
  • Cook for about 1 minutes on each side on medium-high heat. Watch the temperature, though. They can burn quickly. You want them to get golden brown fairly quickly, without burning.
  • Remove from the pan and sprinkle with sugar. Serve either warm, or cold with fresh whipped cream and basil.

Notes

These are great warm or cold. If served warm, they will do a bit of oozing and gushing. Super yummy! Cold burritos make for a great eat with your fingers treat. Either way...they are great!
