Preheat Oven to 350F.
Lightly grease a 8x8 pan and line it with a parchment paper
In a microwave safe bowl, melt together the chocolate chips and butter. Stir till smooth.
In a bowl, whisk together the flour, baking soda, baking powder and salt - keep it aside. Mix the coffee granules and hot water together.
In a separate bowl, whisk together the eggs and sugar till the sugar dissolves. Mix in the vanilla essence and coffee mix.
Pour in the melted chocolate and using a spatula gently fold it in.
Add the dry ingredients and mix well using a spatula.
Pour batter into prepped pan and bake for about 25 to 30 minutes till done.
Cool it on a wire rack fully and then stick in the fridge for at least an hour before cutting it into squares using a sharp knife.
