easy cheesy breakfast egg cups

an easy to make, delicious breakfast!

  • 6 rounds of pre-made biscuit dough divided in half.
  • 8 eggs beaten with a bit of salt & pepper
  • 1 pound of ground breakfast sausage cooked.
  • about 3 cups frozen hashbrowns thawed.
  • 1 package of Crystal Farms colby jack or cheddar cheese
  • green onions optional


  • Spray a muffin tin well. (do it a couple of times!)
  • Gently press the ½ of a biscuit pre-made dough into the bottom of the cupcake tins.
  • Layer about ¼ cup of shredded hashbrowns on top of the dough.
  • Add 1/12 of the ground sausage you cooked.
  • Pour a bit of the eggs into the tin, just until it comes to the top. (go slowly...this happens fast!)
  • Sprinkle with cheese!
  • Bake in a pre-heated 350 degree oven for about 25 minutes (or until golden brown).
  • Optional: Immediately after coming out of the oven, add the sliced green onions.


To remove these from the pan gently run a knife along the edges and they should pop out!
