Parmesan Cajun veggies
Easy, fresh grilled produce with a cheesy, cajun flavor.
cut lengthwise and then into 1 inch slices
package bella mushrooms
use fingerling potatoes or cut large potatoes into 1 ½ inch by 1 ½ inch pieces---cooked
cobs of sweet corn---cooked and cut into ⅓rd's.
pkg Crystal Farms parmesan cheese
Put zucchini, onion, and mushrooms on the bottom of a 9 by 13 disposable aluminum pan.
Add cooked potatoes and corn on the cob.
Sprinkle the Crystal Farms Parmesan cheese on top.
Add the fresh cilantro and sprinkle the cajun seasoning.
Add the fresh limes.
Dot with butter.
Place on medium-high heat for about 15 minutes, stirring every 5 minutes. It is done when the cheese is melty and the zucchini can be pierced easily with a fork.
Sub out whatever veggies you have on hand being sure to pay attention to the cooking time of each veggie. Whenever possible, pre-cook your veggies.
