Oatmeal Applesauce Muffins
Full of flavor and nutrition, these applesauce muffins are full of delicious nutrition!
Servings 12 muffins
- 2/3 cup sugar
- 1 egg
- 1/4 cup oil any oil will do.
- 3/4 cup applesauce
- 1/4 cup yogurt
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 1 1/2 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 T oatmeal add more as needed
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup oats
- 1/2 cup golden raisins
Preheat oven to 350 degrees.
Mix together egg and sugar. Beat well.
Add applesauce, yogurt, and vanilla. Beat well.
Add flour, baking powder, spices, oatmeal, and raisins. Stir gently just until mixed
Divide batter amongst 12 lined muffin tins.
Bake for 30-35 minutes or until golden brown on top.
