Chocolate Coconut Milk Pudding

A chocolate pudding that is dairy-free and sugar-free because it is made with coconut cream. Delicious!

Ingredients

  • 1 can of coconut cream thick cream top used ONLY
  • 1/4 cup of unsweetened cocoa
  • 1/4 cup honey start with 1/2 of this and add until desired sweetness is achieved
  • 1/2 teaspoon vanilla bean paste OR 1 teaspoon vanilla extract

Instructions

  • Add all ingredients to the mixer bowl.
  • Mix on high for 5 minutes scraping the bowl occasionally.
  • Pour into 2 bowls and serve.

Notes

For even BETTER results chill the coconut cream prior to using. AND chill the pudding after mixing. Yum!
You can use coconut MILK. It does work just fine but the coconut cream has a cleaner, sweeter flavor.
