Wild Rice Banana muffins are a fun and unique take on the traditional banana bread.

Wild Rice Banana Muffins

Cook Time 25 minutes

Ingredients

  • 1/4 cup wild rice cooked. (about 1 cup cooked)
  • 1 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 3/4 cup buttermilk
  • 1/4 cup melted butter
  • 3 mashed bananas
  • 4 tablespoon honey
  • 2 teaspoons cinnamon
  • 1/2 cup chopped walnut

Instructions

  • Mix flour, sugar, baking powder, salt, and cinnamon together in one large bowl.
  • In separate bowl mix bananas, butter milk, butter, and honey.
  • Add banana mixture to flour mixture and mix just until combine.
  • Fold in rice and nuts. Mix only until combined (do not overmix).
  • Fill greased muffin tin 2/3 full.
  • Bake at 350 degrees for 25-30 minutes (or until toothpick poked into the center comes out clean)

Notes

If you like, sub brown rice for wild rice.
Eat these muffins fresh for best results.
