Easy Veggie Burgers

easy Veggie Burgers made with mushrooms, zucchini, and black beans. Gluten-free and full of flavor!

Ingredients

  • 1 cup chopped zucchini, roasted
  • 1 can black beans, rinsed
  • 2 cups mushrooms, roasted I prefer portabella and bella both
  • 1 small onion, chunked
  • 3 beaten eggs
  • 1 1/2 cups quick oats
  • 1/2 cup Parmesan cheese
  • 1 tablespoon seasoning salt I use Lawry's

Instructions

  • Mix beaten eggs and oats together, set aside.
  • Place zucchini, beans, mushrooms, and onion in food processor or blender and blend smooth.
  • Mix with eggs, oats, cheese, and seasoned salt just until properly mixed together. (eggs should be properly incorporated)
  • Gently roll into 2 inch to 2 1/2 inch diameter patties (about 1/2 inch thick) and place into hot oiled pan at medium-high heat.
  • Cook for 4 minutes on each side at med-high heat.
  • Serve on a toasted but with greens on top (optional, of course :))

Notes

I often make half of the recipe, save the mixture and make the other half the next day. 
This also makes for fantastic meatballs!
