Oatmeal Applesauce Muffins

Ingredients

  • 2/3 cup sugar
  • 1 egg
  • 1/4 cup oil any oil will do.
  • 3/4 cup applesauce
  • 1/4 cup yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1 1/2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 T oatmeal add more as needed
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup oats
  • 1/2 cup golden raisins

Instructions

  • Preheat oven to 350 degrees.
  • Mix together egg and sugar. Beat well.
  • Add applesauce, yogurt, and vanilla. Beat well.
  • Add flour, baking powder, spices, oatmeal, and raisins. Stir gently just until mixed
  • Divide batter amongst 12 lined muffin tins.
  • Bake for 30-35 minutes or until golden brown on top.
