- 2/3 cup sugar
- 1 egg
- 1/4 cup oil any neutral oil will do.
- 3/4 cup applesauce
- 1/4 cup Greek yogurt
- 1 teaspoon vanilla extract
- 3/4 cups wheat flour optional, sub more all-purpose flour for the wheat flour.
- 3/4 cups all-purpose flour
- 1 1/2 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup old-fashioned oats
- 1/2 cup golden raisins

Preheat oven to 350 degrees.
Mix together egg and sugar just until combined.
Add applesauce, yogurt, oil, and vanilla and mix just until combined.
Add flour, baking powder, spices, oatmeal, and raisins. Stir gently just until mixed
Divide batter amongst 12 lined muffin tins.
Bake for 30-35 minutes or until golden brown on top.
