Cranberry Walnut Banana Bread

A delicious banana bread variation featuring fresh cranberries and walnuts.

Ingredients

  • 4 ripe bananas , mashed
  • 1/3 cup Greek Yogurt , plain
  • 1 cup sugar
  • 1 egg , beaten
  • 1 teaspoon vanilla
  • 1 tablespoon whiskey (yes, this is optional. but it's a great addition!)
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/2 cup of flour
  • 1 cup fresh cranberries
  • 3/4 cup chopped walnuts

Instructions

  • In mixing bowl, beat the bananas for a wee bit.
  • Add the yogurt and sugar and beat for about 3 minutes.
  • Add all remaining ingredients but the flour, cranberries, and walnuts. Beat until well combined.
  • Add the flour and beat just until well mixed.
  • Gently fold in the cranberries and walnuts just until combined.
  • Pour batter into a well greased 9 inch loaf pan.
  • Bake in a 350 degree oven for 1 hour.
