Oh gosh, that photo STILL makes my mouth water! This little gem of a loaf that we shall call a Steak and Mushroom Pretzel Loaf is amazing! It is easy to put together and makes a fantastic entertaining recipe for football games, holiday parties, or simply a Thursday night. Use packaged pretzel dough (ours is the fantastic Salted Pretzel Roll Mix from Tastefully Simple!), sliced deli beef, sliced cheese, and bottled sauce to make this SUPER fast, easy, and still amazing!
After you make up your pretzel dough (get the kind we use HERE) and follow the proper steps for resting, rising, and such, roll it out into a large rectangle. I used enough dough for what would make 12 bakery size rolls. You want your dough to be about 1/4 inch thick or so. Be sure to use a well-floured surface!
Once you get your pretzel dough rolled out nicely, pile on your beef and cheese across 1/3 of your rectangle (go the long way)! Because you will be rolling this loaf up, use thinly sliced meats and cheeses that bend nicely. Anything too thick will poke a hole in your dough as you roll. I grabbed thinly sliced roast beef and mozzarella from the deli at my local grocery.
After you get your meat and cheese down, slice mushrooms for on top. Again, keep the slices on the smaller side so they don’t cause problems when rolling (mine here turned out to be a bit too large and made a few holes in the dough that needed repairing).
Add your favorite bourbon glaze to the top of the meat, cheese, and mushrooms. Be generous! We recommend Bayou Bourbon Glaze from Tastefully Simple as a delicious option! It’s smooth, sweet, and has just the right amount of kick for this delicious loaf!
Now that you have all your ingredients inside your pretzel dough it’s time to roll the whole thing up. There isn’t any special way to do roll this up. Make sure you keep your fingers floured and simply fold over one side and roll. Press the whole thing together on the ends, top, sides, and wherever might need a bit of sealing. Do NOT worry if it isn’t perfect, it will still be delicious!
Follow your pretzel roll instructions for making the soda water (most pretzel doughs use a soda and water mixture to create that “pretzely” top), and brush your finished roll with it. I like to add an additional brush of milk to the top of my dough for added brownness when it is finished.
Done! Now pop the entire Steak and Mushroom Pretzel Loaf in the oven and sit and relax, you deserve it!
Note: For baking, reduce the temperature your Pretzel Roll mix recommends and increase the baking time. For example, my Salted Pretzel Roll Mix from Tastefully Simple has the baking temperature at 4oo degrees. I reduced that to 350 degrees and baked it for 25 minutes rather than the 15 minutes for the rolls. I recommend you reduce the oven temp by 50 degrees and increase the baking time by at least 10 minutes and watch it closely every 5 minutes after.
