simplify snacks: easy mini corn dogs
What do we do on snow days in Wisconsin? Eat of course.
And our first snow day was about a week ago. Seriously. It’s like we live in Florida or something.
Well the kids were happy when we finally got that snow day. And snow food. Yes, snow food.
This time it was hot chocolate with all the fixings and homemade mini corn-dogs. Yum!
If you have never made homemade corndogs, corndog muffins, or mini corndogs you really need to give it a shot! They are surprisingly easy and quick. Not terribly good for you but…that’s what sliding is for! And kids love to eat and make them! Just keep the small ones away from hot oil. Bad!
Homemade mini corn dogs. (not healthy. processed usually. fried in vast amounts of oil.)
cornbread batter (get a mix if you don’t make your own–jiffy has a good one!)
hot dogs cut up into pieces.
veggie or canola oil.
Take those dogs, dip them in cornbread batter drop them into hot oil and fry the snot out of them.
Tip: use brown sugar instead of white in your cornbread recipe and try thinning it a bit with melted butter.
And when those are fried up you are ready serve them up.
And ignore these pictures…you really need mustard. We didn’t have any…gasp!
And then serve them with sugar laden hot chocolate with lots of fixings.
