Grown-up Shortcake

I love yummy desserts.
I love fast, yummy desserts.
I love fast, yummy desserts with a little…grown-up appeal.

This is one of those desserts that is yummy…fast…and grown-up!.

This recipe is between a shortcake and a tiramisu.
It tastes fresh and delicious.
With just the right hint of…grown-up.

The trick to this recipe…using COOL WHIP Whipped Topping to help give it that tiramisu flavor, without the work.

Ingredients.

1 lb. strawberries
2 tab balsamic vinegar
1/4 cup. powdered sugar
1 tsp. vanilla

4 oz cream cheese
1/3 cup. sour cream
1/4 cup. strong coffee
3 tab powdered sugar

1 pkg frozen puff pastry

1 12oz container of COOL WHIP Whipped Topping

1 cup of coffee-flavored liqueur (like Kahlua)

Step 1.
Put your strawberries in a medium size bowl and prick them repeatedly with a fork, this helps them soak up the vinegar and sugar.

Mix those first 4 ingredients together and set aside.

Step 2.
Mix the next 4 ingredients together in a small bowl. Whisk them until smooth and light. Set in the fridge until ready to use.

Step 3.
(if you are a great multi-tasker you could be doing this while doing Steps 1 and 2. Or just be like me and take longer)
Cut the pastry sheets into squares.
I think each sheet gets 9 squares each
for a total of 18?
If I remember correctly.
Put the squares on a greased cookie sheet and bake
them in a 400 degree oven for 7-9min.
Or until golden brown.
Cool for 10 minutes or so.
Cut slits into the tops of all but
6 of them with a sharp knife.

I put the cooled pastry (with the slits on top) in a cookie sheet with a little aluminum foil
“catcher” so as not to waste the liqueur.
Pour the liqueur slowly over the tops of the pastry
to soak them.
Let soak for 15 minutes or more.

Now for the good part.
Time to layer the ingredients.

A puff pastry soaked in liqueur comes first.
Followed by a scoop of cream cheese mixture.

Then the important part…
The COOL WHIP Whipped Topping.
We use COOL WHIP Whipped Topping to make this dessert
taste wonderful. It adds to the sweetness
and helps achieve the tiramisu flavor.
And a dollop of COOL WHIP
on top always adds a nice finished touch.

A dollop of COOL WHIP Whipped Topping
on top of the cream cheese mixture.

Repeat.
When all your layers are done
drizzle the top with a bit of liqueur.
Until you get this finished product…

Yes, it is a bit messy.
But…it is delicious.
