S’more Cheesecake Bites
I’m on a real mission to simplify the projects, diy’s, crafts, and recipes that I share here on the blog with you. I realize more and more that more can be just that…more. Think I can say more one more time? …more!
This recipe stays with that theme. Truth be told this treat is a very rare thing in our house. We’ve cut out processed food and sweets. So, when I sent Nate out to grab the goodies to make these little s’more cheesecake bites up let’s just say the kids were a wee bit happy. Just a wee bit excited. So, because I wanted to put this together for you guys…my kid’s say thank you. S’more thank you’s to you from me. (bahaha…I’m just a funny girl)
It doesn’t get much easier…does it? You could make all the elements if you wanted to. But why?
Press a ball of dough into the bottom of a greased cupcake pan. Use your thumbs to press it up the sides a bit. Follow the directions and bake them. But…only for about half the time. Then take them out.
Grease the bottom of a shot glass or another such shaped contraption and press it gently into the partially baked cookies. Pop them back in the oven to finish.
Drop a dollop of hot fudge in the center of the cookie cups.
Fill up with cheesecake filling. You can purchase some or make your own cheesecake filling.
Top with mini marshmallows.
Put it in a 400 degree oven for about 8 minutes or until the marshmallows are golden brown. This brings the s’more element to a giant hurrah!
Let cool. Remove from pan and chill.
These are better the next day. Just fyi.
