Coconut Lime Cupcakes

Cupcake Week continues with Coconut Lime Cupcakes!!!

First the whining…

I picked the hottest day in the history of hot days to make cupcakes.
Cause I love you all. Or because I love cupcakes. Which ever.
Really…not smart! But, when it comes to cupcakes…I will suffer alot!

Now the disclaimer…

I do not care about how cupcakes look. Just how they taste.
I have been making an attempt and adding pretty toppings.
But, this cupcake has droopy frosting and not terribly creative toppings.
But, that’s because all the time was spent on the CUPCAKE!
Which, is the important part.

Okay, moving on…

This is summer cupcake week. Not just cupcake week. And this cupcake screams
summer to me. Light and tasty. And zesty. And sweet. It’s yum!

Coconut Lime Cupcake

Coconut Cupcake:

-2 1/4  cups all-purpose flour

-1 tsp baking powder

-1 tsp baking soda

-1 tsp salt

Mix dry ingredients together in medium bowl.
Set aside.

-1 1/4 cups sugar
-1 1/2 sticks of butter

Beat with electric mixer.

-3 eggs

Add eggs one at a time to butter mixture.
Beat in between each addition.

-1 cup coconut milk

 

Add a little of the coconut milk.
Then a little of the dry mixture.
Keep going until everything is mixed in.

-1/4 cup shredded coconut.

Fold into the batter.

Bake on 350 degrees for about 20 minutes. Let cool.

Lime Frosting:

-4 cups of powdered sugar
-1 1/2 stick of soft butter
-4 tab lime zest
Beat together until fluffy

-4 tab of lime juice
-1/4 tsp salt
-1/4 cup coconut milk

Beat into butter and sugar.

Add sugar until desired consistency is reached.

 

To assemble:

shove some coconut into the center of the cool cupcake.
Top with yummy frosting.
Top with coconut and lime zest. And a cherry. Sometimes.

Look at all that droopiness. It didn’t help that it was like 95 degrees in the kitchen.
Everything was drooping.

But oh my these were lovely to sit and enjoy! And I enjoyed!!
I saved you some. But, then they got droopy looking so I rescued them into my belly.

  2. Mmmmmm, I love lime and coconut so I know I would DOUBLY love these!! And droopy frosting just means you get to lick your fingers which makes eating these that much more fun!
