I don’t know what I was thinking planning Cupcake week during swimsuit season.

I guess I was thinking…cupcakes are a happy place, let’s make the world happy!
My thighs are not happy.
But, my belly and soul are.
It is a tradeoff.
I was just going to do the Root Beer Float Cupcakes for today.
Then my Love Machine asked if he could pretty please have Banana Cream Cupcakes.
Right before Fathers Day…not fair!
So, I did both. Cause you have to feed the love machine sometimes.
He makes our world go round. Round a round.
Here’s the yummy, thigh killing, soul pleasing cupcakes…
I would like to say these are super fancy pancy.
That would be lying.
And lying gets you struck by lighting.
These are simple.

Banana Cream Pie Cupcakes
- Package of French Vanilla Cake Mix (and the stuff to make it eggs, oil, water…etc.)
- 2 vanilla beans
- 2 tsp. vanilla extract
- small box of instant banana cream pudding (and milk to make it)
- 3 bananas
- whipped cream (Coolwhip or homemade works fine)
- pie crust, baked. (I use the premade kind)
Mix the cake mix according to the package instructions.
Add the seeds of the 2 vanilla beans.
Add 2 tsp vanilla extract.
Mix together.
Fill cupcake liners by 1/3 cup and bake according to package instructions. Cool.
For filling mix the pudding with only 1 cup of the milk.
Mash the 3 fresh bananas.
Add to the pudding.
Using a spoon scoop out the cupcakes to create a hole in the center of the cupcake.
Fill with the banana pudding mixture.
Top with whipped cream.
Top with crushed, baked pie crust.
These were wonderful! Delicious, yummy, terrific…all the good words.
My love machine ate 2 right away. And another later…yay!
Nope…not going to give you a recipe.
Because these were a fail.
Not really a fail, they were tasty.
A fail in the recipe department.
I could never recreate them again…I had to fix and fix so much that I lost track.
But, here’s the basic recipe that I was left with.
Vanilla Cupcake (I used the same recipe as the Banana Cream Pie cupcake above)
Root Beer Filling
- 3 tsps root beer concentrate
- 1 stick softened butter
- 3 cups powdered sugar
- 1/4 cup milk
I made the mistake of using root beer instead of milk. And then couldn’t figure out why it looked funny. DOH!
Whip up with your beater those 4 ingredients. Add more concentrate if needed.
Scoop the centers out of your cooled cupcakes and fill with the root beer frosting.
Add root beer concentrate to whipped cream to top these bad boys.
And a cherry on top of course!
These were yum…not exactly float material. I have a hard time believing you can recreate that in a cupcake.
Someone prove me wrong!

My aha’s during this cupcake making session…
-bought pudding tastes just as good as the homemade kind…really!
-baked pie crust makes the cutest and easiest garnish…soo doing that again!
-vanilla beans burned in a candle do not smell like vanilla. Just like burnt mess.
-root beer concentrate does NOT taste good like the drink. Yuck!
-Root Beer (the beverage) does NOT work for flavoring.
-Root Beer (the beverage) breaks frosting and fillings down to gooey messes.
-It takes a LOT of root beer concentrate (yes, I figured out that is how to get the flavor!)
to get enough flavor.
-It is near impossible to frost these cupcakes because the frosting keeps getting snitched.
-Root beer flavor needs to be in almost everything…the cupcake, the filling AND the frosting.
-Vanilla Ice Cream CAN be used for frosting…quite successfully! And yes, it melts all over. And tastes yummy.
-There are a lot of recipes out there for Root Beer Float Cupcakes. Try one. And tell me if it’s a winner!

Hmmm….. I’ll scratch off the RB float ones because it would be easier to just make a RB float so the famdamily isn’t disappointed. And I think it’s funny you are referring to Mr. HM as the Love Machine the weekend you return from vacation. Gives me a real glimpse into your trip.

My girls favorite is root beer floats – with chocolate ice cream! They would love these – hopefully we can follow along and figure this out because we (like you) will eat all the frosting before the cupcakes are cooled!

Hey Girl! Have you ever made cupcakes with bacon. Everywhere I see bacon on chocolate, bacon on brownies, bacon, bacon bacon! I am thinking I am loving this bacon for dessert thing but what about something this week with bacon on cupcakes!! I just know you can come up with something:) Not to worry I am looking also even though I might have to buy that huge cover up not only for my bathing suit but for all my short sets this summer.
